Cifra is red wine with a lively tannic texture, an artisanal gem not to be missed. It is the brainchild of Luca d'Attoma, a nationally renowned oenologist, who foresaw the potential of Cabernet Franc within the province of Pisa. Cifra comes from the pure use of an international red grape variety, Cabernet Franc. The vines of this variety are cultivated in vineyards characterised by a clayey subsoil, with a strong presence of stones. The vines are grown according to biodynamic farming principles, and each label is certified by the Demeter organisation. The grapes, once in the wine-making rooms of the Duemani cellar, ferment spontaneously thanks to the presence of indigenous yeasts, macerating at a controlled temperature in cement vats. This is followed by the ageing phase, in which the wine is left to rest in cement for a few months.
Cifra is a red wine that, on visual examination, presents itself with a deep colour, characterised by a shade reminiscent of ruby. The bouquet of aromas on the nose is interesting, with a carpet of fruity notes from which emerges a varietal aroma of red pepper and some floral hints. It is medium-bodied on the palate, with a pleasant freshness and a fruity flavour, with tannin that does not take long to become noticeable. A label that the Duemani winery defines as a "manifesto of its own style", with which Luca D'Attoma, renowned oenologist and creator of several important Italian supertuscans, and his wife Elena, introduce us to the beauty of the Tuscan Coast.
