Collerosso

The history of the Collerosso brewery begins in 2005, when within its walls Leonardo di Vincenzo brought to life Birra del Borgo, one of the landmarks of the Italian craft beer scene. Following the expansion of BDB in 2016, Collerosso returned to being the call of artisanal origins of production, embarking on a new path, rugged like the dirt road from which it takes its name. Nestled in the mountains of the Apennines between Lazio and Abruzzo in Borgorose, “the old brewery” draws inspiration from the path that ideally unites the tradition of Belgian artisanal fermentation and that of Italian wine, in a continuous balance between the past and the future.

Collerosso has soon become synonymous with spontaneous fermentation, with a bold and ambitious use of wild yeasts and continuous creative contamination. To best express this production philosophy, the brewery develops around a large open steel vat - the Coolship - which in the cold winter nights hosts the must, whose fermentationoccurs thanks to the yeasts naturally present in the environment. The artisanal nature and the wine-inspired production continue with a passage in wooden barrels of Amarone and Montepulciano, which ensure a continuous dynamic exchange between the beer and the outside air, allowing it to evolve and mature from 6 months to 3 years.

Thus, the Collerosso beers are born, an unexpected bridge between the patient world of winemaking and the immediate and creative world of beer fermentation. The result of this marriage is a production literally “timeless”, with deadlines dictated solely by the seasons and the inspiration of the Collerosso brewers. This spontaneity translates into intriguing and unexpected sips “like a jazz solo”, capable of amazing for their character and for their contaminations. This artisanal language tells of the authenticity of the territory from which these beers originate, guiding us along the dirt road of their taste to explore new paths.
