Tenuta Ulisse's Pecorino 'Ulisse' is a wine with a distinctly mineral character. The grapes are treated with cold, through cryomaceration, in order to extract the grapes' aromatic potential to the maximum. The slow fermentation also takes place at a controlled low temperature of around 11°C. On the nose there are hints of grapefruit and peach, but also intriguing hints of papaya. The palate is characterised by freshness and savouriness. Perfect with roast fish or seafood crudités.
