CHIANTI FATTORIA DI SAMMONTANA 2020 DESCRIPTION

 The Chianti from the artisanal winery Fattoria di Sammontana expresses the typically juicy and spicy flavour of the denomination, making it the estate's most traditional label. Located in the municipality of Montelupo Fiorentino, in the province of Florence, Fattoria di Sammontana cultivates about 15 hectares of vines according to organic and biodynamic farming criteria, with the noble objective of safeguarding and preserving ancestral wine values. With this in mind, biodynamic preparations such as horn manure and hornsilica are used in order to promote soil and plant life, treated only with low doses of sulphur and copper in phytosanitary defence.
Fattoria di Sammontana Chianti is mostly made from Sangiovese grapes, to which 10% of Canaiolo is added. The grapes are hand-picked from 10 hectares of vineyards, between 15 and 40 years-old, planted on alluvial soils rich in skeleton and managed under certified organic farming practices. The grapes are then destemmed and crushed, with the resulting must fermented spontaneously in vitrified cement tanks where it remains in contact with the skins for a fortnight. The subsequent period of maturation takes place in steel and cement vats for a few months and the wine is finally bottled without undergoing any clarification or filtration.
On visual examination, the Chianti di Fattoria di Sammontana exhibits a pure ruby red color. On the nose, crisp aromas of red-fleshed fruit, cherries and flowers alternate with descriptors of sweet spices and pepper. Fresh and agile on the palate, with a fine tannic texture that accompanies consistent olfactory sensations. A Chianti of great fluidity and exceptional versatility in food and wine pairings.
