This Frappato by Cos is a still red wine, medium bodied, soft and fragrant, fresh and pleasant, with fruity and leather scents, aged in cement. This Frappato by Cos is an emblematic wine, a whispering marriage of finesse and floral inlays. When the term pioneer, or precursor, is used, it is often used inappropriately and lightly, especially with regard to Italian wine history. When we speak of Cos, however, we speak of Titta Cilia and Giusto Occhipinti, two paramount figures for the development of the concept of artisanal wine, as they pursued it in unsuspected times and were capable of enhancing a magical and uncontaminated territory such as that of south-eastern Sicily. Since 1980, the year the winery was founded, despite logical changes in time and the expansion of the vineyard, Giusto and Titta's intent has remained the same: to bottle wines with a strong territorial bond, produced without adulteration or artifice. Frappato Cos is made from pure grapes of the indigenous variety of the same name, cultivated near Vittoria following the principles of organic farming together with some biodynamic practices. While chemical or synthetic substances are banned in the vineyard, while in the cellar spontaneous alcoholic fermentation in cement and refinement in vitrified cement tanks is carried out. A homeopathic dose of sulphur dioxide is added before bottling.
The Frappato by Cos presents itself in the glass with a splendid transparent ruby colour. It is one of those rare cases where the gentleness of the colour coincides with the profile of the wine, feminine and extremely refined both on the nose and in the mouth. The nose is literally a bouquet of flowers, fragrant and refreshing. The sip is supple, showing neither muscle nor edge, but knows how to be enjoyable by virtue of its sensual tactility.
