Derrumbes' Mezcal ‘Zacatecas’ is produced in Huitzila, a village in Zacatecas that's specialized in the production of blue agave. The Bañuelos are one of the few families that preserves a traditional production methodology: pit cooking, spontaneous fermentation and distillation in copper pot stills. On the nose it explodes in citrus zest and vegetal notes of cooked agave, which evolves into peppery hints of damp grass and finishes in pleasant smokiness. The Mezcal 'Zacatecas' of the Mexican company Derrumbes is a mezcal Joven with a pure and traditional character, of considerable impact. The Derrumbes project was born with the aim of valorising different Mexican territories dedicated to the production of the best mezcals, emphasising the wide declinations of this agave distillate strongly linked to the tradition and culture of the country. In pursuit of this aim, Derrumbes collaborates with numerous producers in different states of Mexico, from Oaxaca to Durango, passing through Michoacán, San Luis Potosí, Zacatecas and Tamaulipas. In particular, this mezcal Joven comes from the state of Zacatecas, located in the heart of Mexico.
Derrumbes Mezcal 'Zacatecas' is made from only blue agave that grows in the village of Huitzila, close to the majestic canyon that separates the area from the Tequila Valley. Here Derrumbes collaborates with the Bañuelos family, represented by Maestro Mezcalero Jaime Bañuelos, who is in charge of production. After harvesting, the agave is cleaned so that only the heart, which is particularly rich in sugar, is used. This is cooked in the traditional way in a stone oven dug into the ground, and then pressed using the Tahona, a large stone wheel traditionally used in the pressing of the agave heart. The alcoholic fermentation of the sugary juice obtained takes place spontaneously in steel tanks, followed by the distillation process in discontinuous copper stills. At this point, the mezcal is directly bottled and finally marketed after 60 days of ageing in glass.
Mezcal Derrumbes 'Zacatecas' has a transparent and crystalline appearance. The nose offers fine hints of citrus and mint combined with typical vegetal hints of grass and agave, as well as spicy and smoky hints. The warm, soft entry on the palate is soon joined by a fresh citrus and balsamic sensation that accompanies the finish.
