Derrumbes' Mezcal ‘Zacatecas’ is produced in Huitzila, a village in Zacatecas that's specialized in the production of blue agave. The Bañuelos are one of the few families that preserves a traditional production methodology: pit cooking, spontaneous fermentation and distillation in copper pot stills. On the nose it explodes in citrus zest and vegetal notes of cooked agave, which evolves into peppery hints of damp grass and finishes in pleasant smokiness. To the palate it surprises with the sharpness of the sip, embraced by a balsamic and refreshing finish
