"Salmariano" is a Verdicchio dei Castelli di Jesi Classico Riserva that comes from those grapes that Marotti Campi grows in the vineyards surrounding the town of Morro d'Alba. We are about 180 meters above sea level, in a terroir characterized by the presence of clay where the vines are trained with the guyot system. Manual harvesting is late and begins in mid-October; in the winery the bunches are destemmed and the grapes are softly pressed. The resulting must ferments in steel tanks at a temperature of 15°C, macerating briefly on the skins. Aging takes place for 12 months on fine lees in steel, and the 20% of the mass matures in barriques.
