Billecart Salmon

In Mareuil-sur-Ay, a small village surrounded by vineyards, located a few kilometers east of Epernay, at the foot of the Montagne de Reims, lies the Maison Billecart-Salmon. Its history begins in 1818, when Nicolas Francois Billecart marries Elisabeth Salmon, both descendants of ancient families of vignerons; with the marriage, the two family estates merge and Maison Billecart-Salmon is born, which begins its own production of Champagne.

Billecart-Salmon is still entirely managed by the same family, which for seven generations, faithful to the motto “finesse, equilibre et elegance”, has passionately and competently dedicated itself to the production of Champagne. Today it owns 15 hectares of vineyards divided into small plots, scattered across the various villages in the area: Mareuil-sur-Ay (3 hectares), Damery (4 hectares), Ay (3 hectares), Mesnil-sur-Oger (4 hectares), and Avize (1 hectare); only from the parcels classified as “100% grand cru” are the vintage wines of the cellar vinified.

In these spaces, there are small cuvés of 50 liters, which allow for the separate fermentation of musts from the different vineyards, and large “pièces Bourguignonnes”, of 135 liters, in which 40,000 liters of Champagne age, waiting to be bottled. The range of Billecart-Salmon Champagne includes top-quality bottles, among which stands out the “Rosé”, the most famous and representative Champagne of the House, a true leader in the category, endowed with a fine perlage with a slight taste of strawberry and raspberry and a long persistence on the palate.
