Birrificio Civale
Civale is a small brewery from Piemonte founded in 2009 out of a deep passion for beer by two friends and homebrewers: Vincenzo Civale and Daniele Cosenza. A passion that for Vincenzo dates back to the end of high school and the beginning of university, when he frequented the historic breweries of Turin and was guided by the experience of those behind the counter pouring. Daniele, on the other hand, bought his first kit in 2000 and specialized a few years later with all grain, arriving in 2006 to open the first beer shop in the Alessandria area, where he communicated everything he had learned about craft beer. The dream of Vincenzo and Daniele was born in 2007 when the two soon-to-be brewers met for the first time and immediately began exchanging ideas, recipes, tricks, and secrets accumulated and experienced over time. There is harmony! A winner's understanding that materializes in the production of the first beers and in the experimentation of recipes already tried countless times individually, with the sincere desire to open their own brewery. It starts with the search for the walls, continuing with their renovation, the purchase of the first fermenters, and the choice of the best systems. Finally, on May 5, 2009, Vincenzo and Daniele inaugurated their microbrewery with the first brew.
With time, patience, and consistency, Civale has gradually established itself as a happy and consolidated productive reality, not only in the production area where it was born, in Spinetta Marengo in the province of Alessandria, but throughout the national territory and even abroad. Vincenzo today takes care of the administrative and commercial part, allowing Daniele, the in-house master brewer, to freely express his productive creativity. New professional figures have gradually joined the staff, such as Matteo, assistant brewer and logistics and shipping manager, and Antonella.
The beers of Civale are inspired by the Belgian and Anglo-Saxon worlds with an interesting Piedmontese influence given by the use of local raw materials. The annual production now guarantees reaching 1000 hectoliters with a brewing room of 12 hectoliters, numerous fermenters and barrels for aging in wood.
