Cacovich

At the border between Friuli-Venezia Giulia and Slovenia, where some of the most substantial white wines in the global wine scene are produced, lies the small family-run estate of Dimitri Cacovich, creator of artisan orange wines with a vibrant mineral stamp. The winery is precisely located in the hamlet of Longera, situated at the gates of Trieste, where for generations the Cacovich family has passed down the art of winemaking. In fact, in the early years of the last century, the great-grandfather of young Dimitri, born in 1998, opened an osmiza, a traditional venue in the plateau where wine producers can sell their products directly to consumers, pairing them with typical local foods. This is a very ancient custom, initiated between the 13th and 19th centuries by Charlemagne, which is indicated by the placement of ivy branches with a wooden arrow at the entrance. Alongside winemaking, the Cacovich family is dedicated to beekeeping and has been producing exquisite honeys from over 60 hives.

The vineyards owned by the winery of Dimitri Cacovich are located at the border between the red soil of Carso and the sandstone of Breg, surrounded by bees that promote biodiversity. Based on these pedological parameters, in a climate characterized by significant daily temperature excursions and the presence of the strong night wind Stenčnik, Dimitri cultivates traditional grape varieties such as Vitovska, Malvasia, Ribolla Gialla, Refosco, Sauvignon Blanc, Merlot, and Moscato. These varieties are cultivated sustainably, excluding the use of synthetic chemical products. The harvest is done by hand and the winemaking is traditional, with spontaneous fermentations in open stainless steel tanks without temperature control, accompanied by a few days of skin maceration for the white grapes. Maturation also takes place in steel and occurs within the ancient family cellar dating back 300 years.
