Cascina Pastori Colombo is located in the heart of Alta Langa, a region still partially unspoiled that lives in the shadow of the more renowned neighboring wine areas. We are in Bubbio, in the province of Asti, a nomen omen - as they say - since bubeum was the name of a wine highly appreciated at the banquets of ancient Romans. A reality that came to life thanks to the entrepreneurial and adventurous spirit of Antonio Colombo, a world-renowned cardiologist who wanted to expand the boundaries of his work and create wines capable of 'making hearts beat'. Everything began in 2004, the year the first hectares of vineyard were purchased, now totaling 10, immersed in a landscape made of silence and woods, fertile lands, and ambitious projects for the future. Today, the daily activities at the estate are overseen by his son Andrea Colombo, with the enological support of none other than Cotarella.
The deepest desire of Cascina Pastori Colombo is to enhance the Pinot Nero grape in the production area of Piemonte, whose cultivation is attested since 1871. A “capricious” grape variety, difficult to vinify, which rarely adapts easily to a new microclimate that here, however, finds an ideal habitat, thanks to the positive influence of the breezes coming from the Ligurian Sea, the soils rich in limestone and clays, and the temperature excursions of at least 10° between day and night that positively favor its maturation. Thanks to the valuable advice of the oenologist Riccardo Cotarella, this dream has now become a reality, with the commercialization of masterfully crafted labels, both in still and sparkling versions. Another great must of Cascina Pastori Colombo is indeed the sparkling tradition linked to the Alta Langa denomination: the classic method par excellence of Piedmont.
