Cascinazza
Cascinazza is a small artisanal monastic brewery founded in 2008 within the Benedictine monastery of San Pietro e Paolo in Buccinasco, established in 1971 in an old Lombard farmhouse on the outskirts of Milan. Faithful to the Benedictine motto "ora et labora" and bound by the need to sustain themselves through the work of their own hands, integrating the proceeds from various agricultural activities, starting in 2004 the monks wanted to gather the centuries-old tradition of monasteries across the Alps, founding the first Italian monastic microbrewery in the premises of a former stable.
The fascinating brewing adventure of the monks of Cascinazza began after a rigorous apprenticeship at the abbey of Westveleteren in Belgium, where since 1838 a very prized Trappist beer has been produced, and then at the famous breweries of the Achel and Chimay abbeys. Once they learned the secrets of Trappist production and, after several years of experimentation and home brewing, the monks acquired a semi-automatic production system similar to that of the Achel abbey, launching a small quality production, carried out without the involvement of laypeople and external staff, following work rhythms compatible with monastic life. Within a few years, the bottles produced have received appreciation from many enthusiasts, entering the menus of prestigious restaurants in Milan. The goal of the producing monks is not only to replicate a traditional Belgian-inspired model, but to interpret the production of monastic beers according to a new sensitivity and an Italian taste, stimulating with originality and passion the Italian food and wine culture.
Cascinazza beers are produced with top fermentation, with bottle refermentation. The raw materials consist of barley malt, raw and malted wheat of Italian origin, American hops, and a unique strain of yeast developed internally, in line with the best monastic tradition.
