Clos du Moulin aux Moines
The important Burgundy winery Clos du Moulin aux Moines boasts a millenary history, as the clos, a French term indicating vineyards well defined by walls, was created by the Cistercian monks of the famous Abbey of Cluny back in 962. We are in Auxey-Duresses, in the heart of the prestigious Côte de Beaune, a wine-growing area renowned for producing the most elegant, complex, and long-lived Chardonnays in the world, as well as great Pinot Noirs. Since 2008, the Domaine has belonged to the Andrieu family, which manages 15 hectares spread across the AOCs of Auxey-Duresses, Monthelie, Pernard-Vergelesses, Pommard, and Saint-Romain, seeking a style less contaminated by wood.
Clos du Moulin aux Moines follows the principles of organic farming, of which it can boast certification, cultivating only its own grapes not only with the intent of offering quality wines but also to preserve and enhance the noble terroir of the Côte de Beaune. Pursuing this production philosophy, the harvests are carried out strictly by hand and the bunches are usually completely destemmed, although this depends on the characteristics of the vintage. In the cellar, production is far from any enological artifice, seeking a classic style. Fermentations take place spontaneously and aging is done in French oak barrels within the evocative 15th-century cellar. Generally, about 25% of new wood is used for the most important labels.
