Col de' Salici
The Col de' Salici winery produces high-quality Prosecco Superiore, which stands out from the rest of the market for its artisanal care and a sincere passion for the territory of Valdobbiadene. The classic area of Prosecco Superiore and its wines have very little in common with the vast quantity of industrial Prosecco that has flooded the Italian and international markets in recent years. On one hand, there is a sparkling wine born from an ancient tradition and a high-hill territory, well-suited for viticulture due to its climate and soils, while on the other, a product born from an endless plain of young vineyards, managed with high yields per hectare, under a regime of total mechanization of agriculture, with the sole objective of low-cost quantity.
Col de' Salici was founded in 1997, in a period that was still unsuspecting and before the boom of sparkling wine from the Marca Trevigiana. Giancarlo Notari decided to focus primarily on the territory, with the awareness that a good wine is born only in the vineyard. The estate was born, in fact, from a careful selection of the best plots in the Valdobbiadene area, in order to guarantee a raw material of excellent quality. The vineyards are located on the steep slopes of the hilly areas near the Prealps, on calcareous-clay soils that are very suitable for the needs of white grape varieties. The cool climate with significant temperature variations ensures excellent ripening of the grapes, which arrive at harvest with intense aromas and intact freshness, essential for creating sparkling bases of excellent quality.
The Col de' Salici labels have established themselves in the panorama of Venetian sparkling wines thanks to a fresh and elegant profile, characterized by refined floral and fruity notes. The best selected bunches in the vineyard undergo a cryomaceration to extract the maximum aromas and are then sent for fermentation. After a short aging, the base wines are blended and the sparkling process and second fermentation are carried out using the Martinotti or Charmat method. The range offers the classic versions of Prosecco, all Vintage: Valdobbiadene Prosecco Superiore Exta-Dry, Valdobbiadene Prosecco Superiore Brut, Valdobbiadene Prosecco Superiore di Cartizze and a Rosé Sparkling Wine made from Glera and Raboso del Piave grapes, always produced using the Charmat method.
