In the winery, fermentations are entrusted to indigenous yeasts alone and are accompanied by short whole-cluster macerations for the red grapes, but without carbonic maceration. Some white grapes are also vinified with skin contact to create characterful orange wine. For aging, predominantly oak barrels are used and the entire winemaking process is carried out without the contribution of invasive external inputs.
