DiBaldo is a creation of the fragrance expert Baldo Baldinini, who wanted to put his extraordinary knowledge of the world of essences at the service of the tradition of flavored wines, liquors, and Gin, creating a collection of original and high-end labels. Of Romagnolo origins, Baldo has always had a natural predisposition to explore the world around him through smell. His extraordinary sensitivity to fragrances soon led him to work professionally in this fascinating sector. Thanks to in-depth studies and a continuous sensory exploration of nature, the desire was born not to stop at the world of fragrances but to delve into the world of taste and Spirits as well.
Thus begins a research journey that led him to be named in 2020 Maestro d’Arte e Mestiere by Fondazione Cologni and ALMA – Scuola Internazionale di Cucina Italiana. His world is made of fragrances, aromas to perceive, classify, and blend with wisdom and skill. The selection of botanicals represents for Baldo a true journey into nature. His creations are the result of an olfactory and taste itinerary that has led him to find the perfect and harmonious fusion of various ingredients, capable of giving unmistakable and refined fragrances. At the base of his work is a very rigorous selection of raw materials, from the base wines of the liquors, Vermouth, Bitter, to the botanicals used to create the various Gin labels, each with its distinct personality.
Thanks to his sensitivity, Baldo has been able to extract the best from every plant, flower, herb, root, bark, and creatively and originally recombine the fragrances. Everything originates from his laboratory, aptly named Olfattorio. A place where one can surrender to pure sensory research, isolated in the nature of the Saiano estate, located on the Rimini Hills. It is here that suggestions, ideas, intuitions, and pairings are born. It is a true studio with an infinity of tinctures, medicinal botanicals, spices, extracts, essential oils, alcohols, hydrolates, cataloged in hundreds of bottles.
