Doi Mats

The Doi Mats winery is located in Ipplis, south of Cividale, in the heart of the Colli Orientali area of Friuli, just a few kilometers from the border with Slovenia's Brda. The project was born from the meeting between Daniel Eros Carnio and Enrico de Candido, who decided to share their passion for the land and the ancient winemaking traditions of the area. The basic idea is to produce wines capable of interpreting the authentic spirit and culture of the terroir. The awareness of the centrality of the vineyard and the need to start from grapes of the highest quality led to the search for particularly suited parcels on which to base all the work.

The deep knowledge of the territory guided Eros and Enrico to identify two vineyards of particular value. The first chosen plot is located on the hills of Buttrio, with a wonderful sunny exposure facing south, on soils characterized by the presence of prized Eocene marls. The particular microclimate, warm and mild, has always been suited for the cultivation of red grape varieties.The second plot is located in the highest part of the Spessa hill, in an unspoiled area surrounded by ancient woods, hosting an old vineyard with 80-year-old plants. The sunny south-facing exposure and constant ventilation allow for the production of healthy grapes of excellent quality. The vines root in calcareous marl and sandstone rich in mineral substances, giving the wines a typical savory profile.

The winery's philosophy is oriented towards the creation of high-quality wines, capable of expressing the authentic character of the territory. It is a small artisanal production, with a few thousand bottles for each label, cared for in every detail. The vineyards are managed with exclusively manual work, from pruning to harvest, with the utmost respect for nature and environmental sustainability. The winemaking embraces the idea of light enology, with minimal interventions, to always highlight the varietal richness of the grapes and the unique characteristics of the terroir. The aging process takes place using both oak barrels and terracotta dolium, which allow for micro-oxygenation without imparting aromas.
