Domaine Collet

Domaine Collet is a small family-run business that has its roots in Fontaine Denis, in the beating heart of the Cote de Sézanne, where the Chardonnay grape is the undisputed protagonist of the area. Always suppliers, starting from the 1970s they began to vinify their own grapes in a cooperative, and it will finally be Renée Collet who brings the maison to life. Today, the reins of the winery are in the hands of the three sons who are committed to carrying it forward, driven by the same spirit as their father. Vincent, Thomas, and Florent, for 16 years now, each with different roles based on their different skills, take care of the vineyards, winemaking, and sales, always paying particular attention to the territory.

The philosophy of the Collet brothers is to best enhance the specific characteristics of each of the 15 vineyards through careful vinification. The 5 hectares of property, mostly of Chardonnay (60%), Pinot Noir (39%), and Pinot Meunier (1%), rest on soils with a limestone and clay-silt character, endowed with a gypsum subsoil that reaches 500meters thick. The rows are grassed, the use of herbicides has been reduced by 70% in the last 10 years, and thanks to the use of sexual confusion, pesticides have been banned, allowing the return of insects that had long disappeared in the vineyard. Once the grapes are harvested, they are pressed in the winery and vinified separately in steel tanks and wooden barrels, where part of the malolactic fermentation takes place in order to transfer the intrinsic freshness of the bunches into the must. The heart of the vinification for Domaine Collet is represented by aging in new wooden barrels purchased from the best cooperages, where the wine rests until the moment of blending.

The Champagnes of Domaine Collet are known for their taste-olfactory generosity and for the richness of fruity and citrus aromas that they can offer with every sip. Also noteworthy is the respect that the maison has always shown towards the environment; in fact, thanks to solar panels, it has been able to autonomously produce part of its energy needs in recent years.
