Domaine de la Tour
The Domaine de la Tour boasts ancient origins and today represents an interesting reality in the panorama of the prestigious denomination of Chablis. The Domaine was founded back in 1820 with an initial core of just half a hectare of vineyard in Chitry. Over time it has slowly grown with progressive acquisitions of neighboring territories, but the real leap in quality occurred after 1960, with the decision to expand its presence within the territory of the Chablis denomination by planting new vineyards. The definitive expansion of the property was then completed by acquiring 3 hectares cultivated in the Premier Cru of Montmains and in the areas of Côte de Cuissy and Côte de Jouan.
Today, the Domaine de la Tour extends over a total of 15 hectares, with vineyards in the denominations Chablis Premier Cru, Chablis, Petit Chablis, Bourgogne Chitry Blanc, and Bourgogne Aligoté. The attention to the environment and the natural context in which the vines are immersed has led the Domaine to abandon the use of chemical weeding since 2003.in favor of a low impact vineyard management. In the countryside, the principles of integrated pest management are applied, with a minimal use of treatments only in cases of absolute necessity. A choice that aims to preserve the soil, its natural fertility, and biodiversity. The vines have been planted and managed in such a way as to force the roots to go deep in search of nourishment, so that they can better withstand water stress and have a greater capacity to react to unfavorable climatic situations.
The wines of the Domaine de la Tour are the result of the desire to always bring the characteristics of the territory to the forefront through the grape variety. The pursuit of excellence drives the focus entirely on the vineyard, in order to have high-quality grapes and then operate little in the cellar, limiting oneself to facilitating the transformation of the must into wine, with minimal oenological intervention. This is especially true for the area of Chablis, which can count on a territory of extraordinary value. The soils are of a calcareous-clay matrix, with a substrate.rocky consisting of Kimmeridge limestone beds, rich in ancient marine fossils. The particular composition of the soils and the cold continental climate give Chardonnay an extremely fine profile, freshness and minerality.
