Don Papa

Don Papa is a much-loved Rum brand among enthusiasts who seek the best excellence produced outside the classic Caribbean area. The history of Rum in Central America begins after the colonization by the Conquistadores. It soon becomes clear that the tropical climate of the Caribbean islands is particularly suited for the cultivation of sugar cane. The plant is imported and extensively planted, both for sugar production and for the extraction of juice and molasses for distillation. It was, in fact, much cheaper and more practical to produce local spirits rather than transport them by ship from old Europe.

Sugar cane has always been cultivated in the Philippines, and Rum Don Papa is a brand that comes from this land. The distillery was created in 2011, and its name was chosen to honor the memory of a famous figure from the Philippines. The brand is inspired by the figure of Papa Isio, a renowned fighter of the Philippine revolution, who in 1890 led the revolt to drive out the Spaniards from the island and put an end to their colonial domination.  The headquarters is located on the island of Negros, and the sugar cane plantations are in a particularly suitable area, near the volcano of Mount Kanlaon. The fertile lands generated by volcanic disintegration, rich in minerals, and the warm and temperate climate have always constituted the ideal habitat for sugar cane.

The availability of high-quality raw materials allows for the creation of high-level distillates. The sugar cane is cut and worked artisanally to extract a very sweet, dense, and aromatic molasses. Fermentation is then carried out, followed by distillation in traditional copper stills under the watchful eye of expert Master Distillers. The rums are characterized by a particularly smooth and seductive profile and have quickly established themselves internationally. This is a production of premium rum that is still limited, particularly loved by connoisseurs for a production process that is still carefully crafted. The range of labels is wide and based on a careful selection of noble woods for aging.
