I Fabbri

The estate I Fabbri is a historic reality of Tuscan wine, whose origins date back to the distant 1620. The Casole estate, in fact, has belonged to the Grassi family since the 17th century and has been passed down from generation to generation until today. The name of the property derives from the ancient activities of the family, which, in addition to owning vineyards and olive groves, also had a workshop for metalworking. For many centuries, the estate limited itself to cultivating the vines and then selling the grapes to local merchants. The great change began in the 1920s with the start of in-house bottling, a still pioneering activity for the time, which opened a new path for the company.

However, the subsequent generations of the Grassi family pursued different professional careers, gradually distancing themselves from the traditions of viticulture. Bottling was thus abandoned, and they returned to simply selling the grapes. After several decades of neglect, in 2000 Susanna Grassi decided to restore the property to its former glory by creating the current company I Fabbri. The love for her land and for her family roots drove Susanna to return to bottling wines under her own brand, with the intention of creating a range of high-quality products, an expression of ancient savoir-faire and of a terroir that has always been among the most vocated areas of Chianti Classico.

The vineyards are located at an altitude between 550 and 650 meters above sea level and are largely cultivated on old terraces supported by dry stone walls, which have been recently restored and constitute the historical memory of the estate. The property occupies a beautiful basin facing south and southwest, surrounded by centuries-old oak and conifer forests. The particular microclimate allows for excellent ripening of the grapes, also thanks to significant temperature excursions between warm days and cool nights. The soils are poor and stony, rich in galestro, particularly suitable for the cultivation of Sangiovese, which in these conditions expresses itself with great elegance, freshness, and finesse.
