Il Sasso
Il Sasso is an interesting winery in Valpolicella, which produces wines faithful to the oldest local traditions. It is a reality particularly loved and appreciated by connoisseurs, who do not settle for labels coming from a somewhat standardized production, typical of many territories blessed with great success. This is the case of Valpolicella, which, driven by the international allure of Amarone, is experiencing a period of expansion in all markets. However, the strong growth in production also brings with it the risk of losing sight of that artisanal approach capable of transferring into the glass the most authentic spirit of the territory. The winery Il Sasso was born precisely to recover and enhance this aspect of Valpolicella, through wines of excellent quality.
The Il Sasso estate is located near Montricco di Negrar, in the historically most vocated area of the territory. The origins of viticulture in Valpolicella date back to ancient times and even in the time of the ancient Romans, the wines of the region enjoyed an excellent reputation. The area is located northwest of Verona and consists of a series of parallel valleys that descend towards the flat areas with wonderful exposures suitable for viticulture. The cool and temperate climate is mitigated by the breezes from the nearby Lake Garda. The I Sassi property extends over about ten hectares at an altitude of about 300 meters above sea level. The vineyards are cultivated on south-facing terraces, in an area characterized by typical yellow calcarenite soils, a limestone rock that is almost outcropping.
The climate and the poor, rocky soils have proven perfect for hosting indigenous red grape varieties. At the I Sassi estate, Corvina, Corvinone, and Rondinella are cultivated, historically used for the wines of the territory. In the countryside, the principles of organic farming are applied, with treatments based only on sulfur and copper, without the use of fertilizers, herbicides, and chemical pesticides. Between the rows, green manuring is practiced and the presence of many wild plants ensures rich biodiversity. The operations of harvest take place by hand, with selection in the vineyard of the best bunches. In the winery, very simple vinifications are practiced, with spontaneous fermentations and the use of only indigenous yeasts. The result is a straightforward and direct wine, of great authenticity.
