Domaine Jean-Marc Boillot came to life in 1989 and is the story of a fighting passion and a break with the past. Jean-Marc figures as one of those young Burgundians determined to improve family production, and to this end, after 13 vintages followed at Domaine Henri Boillot, he left the ancestral estate in 1984 to seek his own path toward more concentrated, rich and mature winemaking. He became oenologist at Olivier Leflaive and continued his winemaking activities, bottling under his own label the fruit of 2 hectares of vines: these were wines that impressed his paternal grandfather Henri, who decided to bequeath him half of his estate. From his old house and cellar in Pommard, Jean-Marc runs his own new Domaine, while from the other branch of the family, represented by the eminent figure of his grandfather Etienne Sauzet, he receives the valuable old plots of Jarollières, Combettes and Champ Canet. The family craftsmanship continues today with children Benjamin and Lydie, joined by her husband François and their children.

Domaine Jean-Marc Boillot covers a total area of about 11 hectares, divided into numerous parcels that go to make up a mosaic of precious terroirs in the magical places of the Côte de Beaune. The operational headquarters is located in the village of Pommard, where the Premier Cru Rugiens and Jarollières are cared for, and which represents one of the southern bastions of superlative quality Pinot Noir, along with the adjacent village of Volnay: here the family manages the Premiere Cru Pitures and Carelle sous la Chapelle. The lion's share, however, is in the village of Puligny-Montrachet, where the property extends within several Premiere Cru: Champ Canet and Les Combettes, composed of vines over 60 years old, La Garenne, La Truffière, Les Chalumeaux, Les Referts and Sous le Puits. Towering above them all are the 0.18 hectares of rows within Batard-Montrachet, one of the most celebrated white grape Grand Cru on the planet. The vines are trained at very high planting densities, even up to 12,000 vines per hectare, in an environment that preserves biodiversity to the maximum.

In the winery of Domaine Jean-Marc Boillot, winemaking is carried out along the lines of tradition, using grapes harvested at full maturity and harvested by hand in small crates. Chardonnays are made by pneumatic pressing of whole clusters: fermentation in oak barrels and malolactic fermentation and aging for at least 11 months in barrels, about a third of which are new. Pinot Noirs, on the other hand, involve destemming of the clusters and maceration for up to 21 days, with subsequent fermentations at elevated temperatures and pressings in presses: both malolactic and aging take place in barrels, about one-third new.
