Leclapart David
David Léclapart is an artisanal vigneron from Champagne, a pioneer of biodynamic agriculture in the region. This Récolltant Manipulant operates in the municipality of Trépail, within the viticultural area of the Montagne de Reims, where after the death of his father in 1996, he took over the family estate with the firm intention of converting it to biodynamics, releasing the first Champagnes in 1998. Before that, the producer obtained a diploma from the agricultural school of Beaujeu and gained experience at the Léclerc-Briant winery in Epernay. Already in 2000, David, the fourth generation of the Léclapart family, obtained biodynamic certification. In managing the estate, the support of his wife Carole is fundamental, with whom the vigneron embraces a production vision aimed at offering Champagne from single vineyards and a single vintage, without blends and reserve wines.
The vineyards cultivated by David Léclapart extend over just 3 hectares, reserved for the noble grape varieties of Champagne Chardonnay,Pinot Noir and Meunier, distributed over more than 20 distinct parcels, all located in the Premier Cru village of Trépail. The plants rest on soils rich in marl and gypsum and are cultivated according to the principles of biodynamic agriculture. The winemaking approach is based on minimalist and non-invasive techniques, with spontaneous fermentations relying solely on indigenous yeasts and complete malolactic fermentation. As winemaking vessels, stainless steel tanks and small oak barrels of multiple passes are used, while the sparkling process takes place obviously in bottle according to the Metodo Champenoise. Throughout the entire process, the additions of sulfites are minimal, the wines undergo no clarification or filtration, and the sparkling wines are finally marketed without any dosage.
