Levii is an interesting Trentino brand that has managed to capture the attention of sparkling wine enthusiasts thanks to a production of high-quality Metodo Classico. In recent years, the Denomination Trento Doc has carved out an increasingly important space in the landscape of Italian sparkling wines, with an increase in production and a consistently growing quality level. The reasons for this success can be traced mainly to a particularly suited territory. Trentino can offer excellent hilly exposures on the slopes leading up to the first Alpine ridges, with the possibility of planting vines at high altitudes, allowing for grapes characterized by a fresh profile even in hot years, which are becoming more frequent in a historical period marked by significant climate changes.
The Levii Winery is located in the area of Bleggio Superiore. It is a family-run business that started as a typical mixed farming enterprise, where vines coexisted with crops, pasture, fruit trees, and animal husbandry. The face of the estate changed about ten years ago when the young Cesare Berasi took the helm of the company, steering production towards viticulture with the aim of producing Metodo Classico. Thus, the Levii brand was born, which today manages a property of about twenty hectares, composed of various plots located in the area of Valli Giudicarie and the Dolomiti del Brenta, particularly suited for soil and climate for vine cultivation.
The Chardonnay and Pinot Nero vineyards are located at an altitude of 600-700 meters above sea level, in an area characterized by a cool and sunny climate, with significant temperature fluctuations, influenced by the presence of cold air masses descending from the Alpine peaks, contrasted by the mild breezes from Lake Garda that rise up the Adige Valley. The favorable microclimatic conditions, combined with very suitable soils, composed of limestone and morainic soils, very draining and rich in minerals, allow for the production of grapes of excellent quality. The processes in the winery are carried out meticulously, using only the first pressing must and with long aging periods, which require a minimum sur lattes aging of 36 months.
