Macallan
The Macallan Distillery is located on the western bank of the River Spey in Craigellachie, in the Scottish region of Speyside. It consists of an estate of 158 hectares (of which 37 are dedicated to barley cultivation) and the Easter Elchies House, a manor house dating back to the 1700s, which has become the logo and symbol of Macallan. The distillery was founded under the name of Easter Elchies in 1824 by a local farmer, Alexander Reid. In 1892, the new owner Roderick Kamp, a former distiller of Talisker, expanded and renovated it, changing the name to Macallan, which means 'farm of Saint Fillian', a Scottish monk from the 18th century. Today, the Macallan Distillery is a highly successful reality, and the majority of the shares are held by the Edrington Group: Macallan Single Malt is one of the best-selling whiskies in the world.
The extremely high quality of the distillate signed by Macallan is due to meticulous and traditional production methods that involve the use of high-quality barley and characteristic copper stills with a flattened shape, the smallest in the whole region. Only 16% of the distillate that comes from the 14 stills is retained and placed in oak barrels, the 'oak cask', previously used in Spain and America for the aging of Sherry and Bourbon. The water used during the production processes comes from a spring that flows beneath the estate: among Precambrian rocks, minerals, and salts that give a unique flavor to the distillate. Peat is not used as fuel, and the flame is placed in direct contact with the still, which is heated very slowly.
The fabulous Single Malts produced encapsulate fruity aromas and an intense flavor due to the distillation in small stills and the strict selection carried out afterwards. The aging woods, precious and carefully chosen, give the Whisky an aromatic richness and a balance admired and studied around the world. Endowed with extraordinary softness, Macallan whiskies have mineral and woody notes, slightly smoky, and are characterized by a round pleasantness that makes them unique and has made them known and appreciated worldwide.
