Nicolis

For generations, the Nicolis family has passed down the art of viticulture in Valpolicella, producing wine for personal consumption until 1951, the year Angelo Nicolis began trading the first bottles. The estate is located in San Pietro in Cariano, in the southern part of Valpolicella Classica, an area where Giancarlo and Giuseppe, Angelo's sons, inherited their father's winemaking legacy, taking care of the viticultural and enological aspects respectively. Currently, the management is in the hands of Giuseppe and his children Angelo and Sofia, to whom he has passed on the desire to produce territorial wines with respect for the environment, paying attention to the details of each phase of the production process.

The Nicolis estate extends over about 50 hectares of vineyards, planted on clay-limestone soils reserved entirely for local black grape varieties Corvina, Corvinone, Rondinella, Molinara, and Croatina. These grape varieties, rooted in the tradition of Valpolicella, are cultivated according to sustainable agriculture, based on the preservation of biodiversity and the practices provided by the integrated pest management regulations. After the harvest, carried out by hand, the grapes undergo destemming and light pressing. For Amarone and Recioto, the bunches are subjected to a drying process of at least 3 months in ventilated rooms to concentrate sugars and aromas. All vinifications are carried out in stainless steel tanks with spontaneous alcoholic fermentation at controlled temperature and, for wines with greater complexity and structure, the subsequent aging periods take place in barriques, tonneaux, or large French or Slavonian oak barrels, always with a measured contribution of wood. Instead, the more immediate labels mature in steel containers.

This gives rise to expressions that reflect the consolidated tradition of Valpolicella Classica, based on two elements deemed essential by the Nicolis family: authenticity and elegance. The flagship labels of the winery are the Amarone della Valpolicella Classico Riserva 'Ambrosan' and the Recioto della Valpolicella Classico, wines of great concentration and intensity.
