Okus, Luca Dellisanti's winery, stands like a hidden sanctuary among the hills of Cormons and the vineyards of Gorizia, a land infused with history and oenological passion. Located in the heart of Friuli Venezia Giulia, this land is not only the soil on which the vine roots rest but also the pulsating heart of this ambitious project: Okús, "taste" in Slovenian. Luca embraces the daunting task of rediscovering the purity of winemaking, bringing to the forefront wines that tell the story of these lands, cultures, and indomitable passion.

In the breath of the vineyard, Luca works with the enthusiasm of those who live for the art of wine. With less than a hectare in Cormons and an ancient family vineyard in Gorizia, each vine is a note in the symphony of nature. Here, agriculture becomes a subtle art, where every gesture is a tribute to the land and its vitality. Without the use of herbicides, fertilizers, or synthetic fungicides, the vines grow luxuriantly, guided by the wise hand of man who respects the natural rhythm of the seasons. Late cover cropping, meticulous care of plant vigor, and moderate induction of water stress give the grapes a unique quality, imprisoning in the clusters the secrets of a generous and tireless land.

From ancient peasant knowledge to the artisanal process in the cellar, each step is an ode to tradition and innovation. Handpicked grapes find their destiny in Luca's cellar, where they macerate on the skins and are then lightly pressed before being allowed to rest in stainless steel tanks until March. Alcoholic fermentation occurs thanks to indigenous yeasts, custodians of tradition and authenticity. Without filters or excessive additions, the wine patiently rests until its complete maturation. Finally, with a ritual that spans the centuries, the bottles are filled by hand, without added sulfites, in an act of love for wine and for those who will have the honor of tasting it.
