Oscar Bissinger

Embracing an authentic and genuine production vision, Oscar Bissinger is committed to sincerely expressing the character of the territory, specifically that of Monreale, through his wines. Of Swedish origin, Oscar moved to Palermo in 2009, his father's hometown, and in 2015 he met the artisan producer Francesco Guccione, a meeting that changed his life. From that moment on, he began a collaboration that led Oscar to gradually learn the techniques and knowledge of the trade, growing in him the desire to start a project of his own. Thus, with the 2018 harvest, he vinified in Guccione's cellar the organic grapes purchased from a local friend, officially embarking on his personal adventure. Since the very first vintage proved to be a success, Oscar was convinced to establish a continuous relationship with the friend who supplied the grapes, a relationship that has been ongoing for years.

For his winemaking project, Oscar Bissinger exclusively works with Grecanico grapes, also known as Grecanico Dorato, an indigenous white grape variety from the Sicilian territory. The bunches are cultivated in the Monreale area on predominantly clayey soils, following the strict rules set by certified organic farming, with the utmost respect for the health of the environment. After the harvest, which is carried out strictly by hand, the grapes undergo mechanical destemming and soft pressing, not before a light skin maceration, with the subsequent alcoholic fermentation of the must taking place entirely spontaneously in stainless steel tanks thanks to the sole intervention of indigenous yeasts. The entire process then excludes the use of clarification operations or invasive enological additives, except for minimal doses of sulfur when the wine requires it.

Oscar Bissinger's Grecanico manages to capture the Mediterranean essence of Sicily with its marine mineral hints and its suggestions of aromatic herbs, all through an interpretation of great tension and energy.
