Palmento Costanzo
The Palmento Costanzo winery is located on the northern slopes of Etna, in Passopisciaro. The history of the winery is among the oldest in the Etnean territory: the palmento, the ancient dwelling where the grapes were pressed, dates back to the 19th century. The winery is directed by Mimmo Costanzo, a well-known entrepreneur from Catania in construction and renewable energy, who, starting in 2011, together with his wife Valeria, invested in the restoration of the winery and the palmento, without altering its original structure. At the Palmento Costanzo winery, alongside large 5000-liter oak barrels, one cannot help but notice 4 egg-shaped barrels of 2000 liters, commissioned by the winemaker, which, thanks to their shape and oval connective motions, continue to keep the lees suspended in the wine.
Etna flows in the sap of the centenary vineyards of Palmento Costanzo, which extend to about 700 meters in altitude over approximately 18 hectares in the Santo Spirito district, one of the most vocated areas of the denomination, characterized by soil derived from lava degradation, rich in organic and mineral substance.
pre-phylloxera bush-trained vines are rooted in lava stone and are arranged in terraces supported by walls of rare beauty. The winery boasts a very high number of crus, each with its unique expressiveness that reflects the explosive soul of the volcano.
