Pares Balta

Within the municipality of Pacs del Penedès, a few kilometers west of Barcelona, the Catalan wine reality Parés Baltà has been offering authentic interpretations of the territory for over two centuries, an ancient land where the vine has thrived for a long time. This family-run bodega is now managed by brothers Joan and Josep Cusiné along with their wives Maria Elena and Marta, the latter involved in the oenological aspect, where they prove skilled in combining tradition and innovation. The historic winery was built stone by stone in the 1800s, 10 meters underground, and is still used today for the aging of Cava, ensuring optimal and constant temperature and humidity values.

The Parés Baltà winery is located on 5 different estates in the Penedès area, situated between 180 and 800 meters above sea level, from which a great variability of pedological and microclimatic characteristics originates. The productive spirit of the bodega is based on respect for the environment and the cyclesnatural, with particular attention to biodiversity, encouraged by the presence of several beehives raised directly by the family. The rows are managed organically, certified since 2002, while in 2012 there was a total conversion to biodynamic agriculture. To promote soil fertility, only self-produced natural fertilizers are used, while to preserve the health of the vines, biodynamic preparations based on plants and herbs are utilized. There are as many as 16 cultivated varieties, including the grape varieties Parellada, Macabeo, and Xarel-lo, traditionally used for the production of Cava, in addition to the rare local varieties Sumoll, Malvasia de Sitges, and Carignano Bianco. Maria Elena and Marta have introduced techniques aimed at optimizing the quality of the grapes, such as green harvesting, and only when the grapes have reached ideal ripeness is manual harvesting carried out. In the winery, interventions are minimal and never invasive, and various types of winemaking vessels are adopted, such as steel tanks, oak barrels, and terracotta amphorae.terracotta.

The wide production consists of about half of Cava, the famous Spanish sparkling wine made using the Metodo Classico, and the remaining half of still white and red wines. Genuine bottles capable of conveying the multiple qualities of the Penedès territory.
