Doquet Pascal
The Pascal Doquet house is located in Vertus, at the southernmost tip of the Cote des Blancs. Just a few kilometers from Epernay, heading southeast among the famous Grand Cru of Champagne, lies the small village of Vertus, home to the Doquet family. The story begins in 1974 when Michel Doquet and Nicole Jeanmaire inherit the family vineyards and start producing the first bottles under the name of the domaine Doquet-Jeanmarie. Pascal is still a boy when in 1982 he starts working in the vineyard. Inspired and attracted by his father's passion and commitment, in 1995 together with his wife Laure he decides to carry on the family project. He inherits the cellar and founds the brand “Pascal Doquet” in 2004.
Today the domaine has almost 9 hectares spread throughout the Cote des Blancs, from the Grand Cru Le Mesnil sur Oger in Vertus to La Mont Aimè, plus 3.5 hectares in the Vitry-le-François area. His philosophy is encapsulated in the motto “viticulture makes the difference, not winemaking.” The focus between the vineyards and sustainable agriculture are the cornerstones for Pascal. He does not like to talk about winemaking and fermentation, but rather about the health of the vines. He does not use herbicides and tries to minimize the use of copper and sulfur treatments.
Everything starts with the manual harvesting of the grapes, without the use of tractors or machinery. The grapes are gently pressed and left to ferment with their own yeasts in tanks or oak barrels. The wine ages on the lees for a minimum of three years before disgorgement and dosage. The Champagnes of Pascal Doquet are therefore genuine, offering the most varied expressions of the terroir of the Cote des Blancs.
