The Champagnes Paul Bara are the rigorous and direct expression of the Grand Cru of Bouzy, one of the most famous and important areas of the Montagne de Reims, where Pinot Noir reaches the peak of elegance, energy, and expressiveness.

To protect biodiversity and soil quality, the agricultural approach is that of a sustainable viticulture, trying to avoid the use of herbicides and insecticides, favoring the grassing of the rows. In the cellar, nothing is left to chance: after manual harvesting, the grapes are pressed using two presses of 4,000 kg, one of which is a very traditional horizontal wooden press, and the fermentations take place in steel tanks. Only the first pressing is included in the cuvées of the maison, in order to always guarantee the highest quality. The aging on the lees in the bottle takes place in underground cellars dug by hand hundreds of years ago; it lasts about 2 or 3 years for the classic labels while extending up to 5 or 6 years for the vintage ones.
