Pillot Paul
The Domaine Paul Pillot is a small family-run estate that produces great wines with a typically artisanal character, capable of highlighting the best characteristics of legendary terroirs of the Côte d’Or. The Domaine was founded in the early 20th century and has been managed since 2004 by the young Thierry, who represents the third generation of a family that has been cultivating vineyards in Burgundy for centuries. The property is located in the southern area of the Côte de Beaune, near Chassagne-Montrachet, which together with Puligny-Montrachet represents the cradle of the greatest white wines in the world made from Chardonnay. The AOC Chassagne-Montrachet was created in 1937 and today its municipal territory hosts as many as 55 Climat classified as Premier Cru and 3 exceptional Gran Cru: Montrachet, Bâtard-Montrachet, Criots-Bâtard Montrachet.
The area of the prestigious vineyard of Chassagne-Montrachet is located at an altitude between 220 and 320 meters above sea level, with beautiful exposures facing east and southeast. The climate is cool, always very windy, and the soils are characterized by calcareous soils and marly limestone, with the presence of pebbles, very draining and particularly suited for the cultivation of white grape varieties. Over the generations, the surface area of the property has expanded with the gradual acquisition of small parcels of high value. Today the estate covers a total area of 13 hectares, with vineyards cultivated in the municipalities of Meursault, Puligny-Montrachet, Chassagne-Montrachet, and Saint-Aubin.
Thierry Pillon manages the vineyards with great care, respecting the natural environment, aware of the centrality and importance of daily work among the rows to obtain grapes of excellent quality. The harvest is done manually with a selection of the bunches in the vineyard and in the cellar before proceeding to vinification. The fermentations take place naturally with minimal intervention and trying to accommodate the process, allowing the grapes to express themselves directly, spontaneously, and without any type of oenological mediation. The same care is reserved for the aging. They only use French oak barrels, with a calibrated percentage of new wood, in order to avoid the presence of overly pronounced woody notes.
