Perseval - Farge
Perseval-Farge is a small champagne house from the Montagne de Reims, entirely included in the prestigious Premier Cru of Chamery. It is led by Isabelle and Benoist Perseval, who represent the fifth generation of the family of the house, founded back in 1808 by their ancestor Jean Baptiste Perseval. Great attention, both in the vineyard and in the cellar, has always characterized the activities of the Persevals, now also aimed at protecting the territory and the ecosystem, which is why it is certified as HVE3, meaning it is an activity with “high environmental value.” All this concretely translates into the preservation of old vineyard systems, the refusal to resort to invasive practices in favor of integrated pest management in the vineyard, and the choice to use minimal quantities of sulfites, with the aim of fostering as collaborative and direct a relationship as possible between nature and human work.
The 4 hectares of vineyard belonging to the Perseval family are divided into 6 lieux-dits within the Premier Cru of Chamery, famous for the consistent presence of sands in the ground. This peculiarity gives a sharp and austere freshness to the wines produced in this terroir. Alongside the three classic grape varieties of the region, ancient and forgotten varieties such as Arbanne, Petit Meslier, and Fromenteau also find a place here. The Perseval family, convinced that wine must be born from the vineyard and, above all, from the terroir, has developed a clear vision of the entire production process and thus summarizes its mission: “to produce champagne without tricks, without arrogance or extravagance; that have a strong energy and great freshness.” To achieve this, vinifications are usually carried out in wood, at least 40% of vin de réserve is used for the blends, and in the bottle, the aging on the lees lasts for over 4 years.
