In the winery, alcoholic fermentations, which last from 8 weeks to 4 months, occur spontaneously at cool cellar temperatures and are accompanied by
long macerations on the skins. The liquids finish their journey with aging in steel for the base versions and "Vinum Optimum" and in wood for the other selections.
