Rimart represents a family-run sparkling wine business in Catalonia that specializes in making modern yet typical Cava. The winery, run by brothers Ricard and Ernest Martinez, is located near the city of Barcelona, in Sant Sadurni d'Anoia, a municipality renowned for being the hub of Cava production. The name "Rimarts" comes from the initials of founder Ricard Martinez de Simon, father of the current owners, who in 1987 decided to start producing quality Cava through artisanal methods. His sons have taken up his winemaking legacy by continuing to make great sparkling wines guided by the same passion and production philosophy.

The agronomic management of the approximately 15 hectares of vineyards is aimed at the utmost respect for nature, evidenced by the organic certification, while in the winery the processes follow traditionalist methods. The grape varieties raised include the indigenous Xarel-lo, Macabeu, Parellada and Garnacha, flanked by the international varieties Chardonnay and Pinot Noir. After the harvest and the elaboration of the sparkling wine base, the re-fermentation process in the bottle takes place according to the Classical Method. Aging in the bottle lasts for a minimum of 18 months for the Cava Brut Reserva to at least 150 months for the Ricard Martinez de Simon, a sparjling wine dedicated to his father. The only exception is the Martinez Rosé, which ages on the lees "only" 9 to 15 months. Disgorgement is still done by hand, with love and care for the product, while dosages tend to be kept very low, below 2 g/l residual sugar.

Alongside the traditionalist view of the production process, the Martinez brothers have given a definite innovative thrust to the design of the labels, which are simple but striking. The Rimarts bodega's Cava wines, which do not reach 100,000 annually, are distinguished by their extreme pleasantness and remarkable flavor balance, as well as their profound authenticity.
