Santa Croce
Santa Croce represents a young production reality of eastern Franciacorta, specifically from the municipality of Paderno, established in 2016 with the purchase of a plot by the Bollicine Mon Amour group, an association that exclusively distributes Champagne and other sparkling wines produced by small and virtuous récoltant from France and Franciacorta, attentive to the protection of the environment and biodiversity. The group entrusted the agronomic management to the competent agronomist Marco Tonni and chose to use the name of the homonymous vineyard Santa Croce, located between the municipalities of Paderno and Passirano. To testify to the prestige of this area, it is enough to think that Franciacorta was the first Italian sparkling wine made using the Metodo Classico to obtain the DOCG, in 2011.
The 12.4 hectares of vineyards owned by the Santa Croce winery are mainly dedicated to Chardonnay, a noble white grape variety that has brought fortune to Franciacorta sparkling wines, alongside smaller percentages of Pinot Nero and Pinot Bianco. The vineyards, managed sustainably, are surrounded by the characteristic “mosne”, round stones removed from the ground during the planting phase of the cuttings, which took place in the early 2000s. The cool climate and significant temperature fluctuations between day and night allow for the accumulation of relevant quantities of aromatic precursors and the preservation of the heritage of organic acids, essential for obtaining great bubbles. The harvest usually takes place in two phases: the first is early to collect the grapes intended for the base Brut, while the second is slightly later for the Satèn. The refermentations take place in the bottle according to the Metodo Classico and, after disgorgement, the wines are generally dosed from 0 to 7 g/l.
Whether they are Cuvée or Millesimati, Rosé or Satèn, the sparkling wines of Santa Croce highlight refined and seductive aromas, as well as a fine and elegant effervescence. Clearly, the distribution of the bottles is also passionately managed by the Bollicine Mon Amour group.
