Sonoma County Distilling
Sonoma County Distilling is one of the most interesting distilleries in all of California. It was born from the desire to experiment of Adam Spiegel, a young man born and raised in the fervor that characterizes San Francisco. Since he was a child, Adam spent a lot of time with his family in the nearby province of Sonoma, where the Spiegels used to spend their holidays and moments of relaxation. Here Adam discovered his passion for creating Whisky, helping a friend who worked in a distillery; he immediately understood his vocation and decided to dive headfirst into production, founding Sonoma County Distilling in 2010 in Rohnert Park. Although it may seem paradoxical for a territory as vast as the United States, in 2010 there were only two hundred distilleries, while today, thanks also to the commercial development of this sector, there are more than a thousand: Sonoma County is therefore a brand that can already be considered historic, despite its very recent establishment.
The motto behind Sonoma County's Whiskies is “From grain to glass”, that is from grain to glass. Every process is indeed followed within the distillery, starting from the selection of raw materials, essential for creating quality labels. The nearby Lake Sonoma ensures the supply of one of the purest and clearest waters in the whole country, and the grains are chosen non-genetically modified, from the best local suppliers. Adam Spiegel has always been a proponent of sustainability, so every decision must be made responsibly, taking care to protect the environment.
Fermentations occur naturally, at uncontrolled temperatures, and distillation is done twice using direct fire still pots. A highly artisanal process, which sees the aging in barrels as the final part of a processing destined to give character and personality to each label. Hard work, traditional techniques and a continuous willingness to challenge oneself are the elements that make Sonoma County's products exquisite. From Rye Whiskey to Wheat Whisky, passing through the most classic Bourbons, the flavor of California has never been so fascinating!
