Spiriti Ebbri
Spiriti Ebbri is the name of an original and innovative winery, among the most promising in Calabria. It was born from the jovial passion for wine of three friends, Pierpaolo Greco, Damiano Mele, and Michele Scrivano, who humorously define themselves as "dirty from the earth." Initially, they produced for personal consumption, for friends and relatives, then, convinced of the high quality achieved, they transformed this passion into a true productive activity quickly gaining the approval of critics and the public and establishing themselves as a young promise of the Calabrian wine scene. Their philosophy is to make wine without the use of chemical products, selected yeasts, or additives, and their approach to vineyard work is close to the principles of biodynamic agriculture. Today they produce from grapes cultivated directly by them but also from other trusted winemakers from some of the most suitable areas of the region.
The vineyards of the Spiriti Ebbri winery extend in the countryside of Cosenza, in the locations of Lappano, Mottafollone and Fascineto. Here there are old ungrafted vines, rooted in sandy soils, with a productive yield that never exceeds 50 quintals per hectare. No fertilizations are practiced, and cover crops, some biodynamic preparations, and small quantities of copper and sulfur are used. The winemaking operations take place in an old municipal cinema that has been completely renovated and converted into a winery, and they involve the absolute respect for the most traditional practices: no addition of selected yeasts or additives, except for minimal quantities of sulfites. Rarely do they resort to filtration or temperature controls because cooling the musts means for the three friends to let them die, and their goal is to "bottle a wine as alive as possible." For aging, they use steel tanks or very old barriques.
