Sylvain Pataille
Sylvian Pataille passionately runs a domaine located in Marsannay, in the northernmost area of the Côte de Nuits, just a few kilometers south of Dijon. He is a vigneron deeply in love with his work and his land. After accumulating a vast wealth of knowledge through numerous collaborations with wineries in Burgundy, in the late '90s he decided to go out on his own with a clear idea: to produce great wines in the most natural way possible. From the very beginning, he was clear that to express the grape varieties and the terroir authentically and directly, it was necessary to eliminate everything that stood between the plant and the bottle of wine. Thus, the idea of a return to the origins of agriculture was born, eliminating all chemical products used in the vineyard and additives in the cellar.
The search for absolute purity has translated into an approach to the territory that respects the environment. His estate covers a total area of about a dozen hectares, managed by applying the principlesof organic and biodynamic agriculture, using only sulfur, copper in very small quantities, and other natural preparations. The vines have thus found their balance within an uncontaminated ecosystem and produce grapes of excellent quality, as well as being healthy and genuine. To avoid compacting the soils, Sylvian has reintroduced the use of horses between the rows, in order to keep the soil always soft, vital, and rich in natural biodiversity. The vineyard is the true center of all his work, and his wines perfectly reflect this sentiment.
Once the harvests are completed, the vinifications take place simply, with minimal oenological intervention and with maximum safeguarding of the varietal expression of the grapes and the authentic character of the Marsannay terroir. As is customary in the area, Sylvian cultivates Chardonnay, Pinot Noir, and Aligoté. His deep knowledge of the places and the pedoclimatic differences between the individual vineyards has led him to prefer parcel vinifications, which translate into interesting labels, capable of makingappreciate the peculiarities and expressive nuances of the different lieu-dits of the domaine.
