Temps des Cerises

The Domaine Le Temps des Cerises is a winery in Languedoc with a spontaneous and sincere style led by the artisanal German winemaker Alex Prüfer. Arriving as a young man in southern France, Alex made his first harvest in 2003, influenced by great artisanal producers like Yan Rohel and Jean-François Nicq. Peculiar is the fact that he spreads around the vineyards hair collected from local barbers and hairdressers in order to keep wild boars away, as they tend not to approach when they smell human scent. The expression “le temps de cerises”, the name of the Domaine, translates to “the times of cherries” and comes from the eponymous 19th-century song associated with the revolutionary movement of the Paris Commune.

Alex Prüfer of Le Temps des Cerises cultivates just over 8 hectares of fully organic certified vineyards, located on the highest hills of the Le Mas Blanc area in an environment that is both blessed and challenging and inhospitable. The vines, some of which are very old, are rooted in schist and granite soils surrounded by woods, in a authentic context of biodiversity. Here, the cultivated varieties include the red grapes Grenache Noir, Carignan, Cinsault, Syrah, Aramon, and Merlot, as well as the white grape varieties Chardonnay, Muscat, Macabeu, and Roussanne. All fermentations take place with whole clusters in a completely spontaneous manner, and for vinification and maturation, Alex primarily adopts fiberglass tanks, but also stainless steel bins and large wooden barrels of multiple passes. Throughout the entire processing, any operations for correction, stabilization, clarification, and filtration are excluded, and often no sulfites are added.

The wines produced by the Le Temps des Cerises winery are dynamic, lively, and pure, made in very limited quantities. The reds, a true pride of the Domaine, are characterized by appetizing freshness and juiciness, while the whites and orange wines highlight a complex mineral vein.
