Toccalmatto
Toccalmatto is the name of a craft brewery with an innovative and experimental approach, located in Fidenza. It was founded in 2008 by Bruno Carilli, a former manager of major food companies, including Carlsberg, along with three other partners. The main premise that united the four protagonists in this adventure was their passion for artisanal production and for beers of Belgian and British tradition. To demonstrate the verve, creativity, and passion on which this productive reality is based, it is enough to think that in its first 9 years of life about 120 different labels have been created, including several “one shot” beers, produced only once in a wave of inspiration. Today it is a well-known and well-established reality that exports its production all over the world, including the United States and Japan.
The Toccalmatto brewery can rely on an important, modern, and efficient production plant, which since 2014 it shares with the important Caulier brand, of Belgian origin. The production philosophy is based onon the intention of producing “live beers”, that is, obtained only through high fermentation and subsequent natural refermentation. The main protagonist of all production is the hops, used abundantly with the aim of obtaining surprising aromas. To achieve this goal, new varieties are sought, experiments are carried out, and cutting-edge hopping techniques are applied. For the aging of some beers, barrels from Italian wineries are also used, in which wines such as Marsala, Sagrantino, and Supertuscan have been aged, as well as grappas and other distillates.
The Toccalmatto beers have managed to win over many enthusiasts in Italy and around the world in just a few years, thanks to a perfect combination of quality, technical ability, and a good dose of originality. Thanks to the rigorous selection of malts, processed in-house, the abundant use of aromatic hops, and any aging in barrels, all produced labels reveal a unique and easily recognizable style, with a well-structured character.
