Tollot Beaut

For five generations, the Tollot family has been producing wine in the Burgundian village of Chorey-les-Beaune, located in the southern part of the Côte d'Or, always keeping Pinot Noir at heart. The winery was founded back in 1880 by François Tollot, who began planting the first vineyards in Chorey-les-Beaune. His son Alexandre married Aurélie Beaut, and from that moment on, the estate took the name Tollot-Beaut. Today, the Domaine is managed by Oliver, Nathalie, and Jean-Paul, who skillfully nurture their ancestors' activities with passion and enthusiasm, respecting the health of the land and the expression of the terroir. Domaine Tollot-Beaut spans approximately 25 hectares of vineyards spread across four different communes of the Côte de Beaune: Chorey-les-Beaune, Savigny-les-Beaune, Beaune, and Aloxe-Corton. The plots, which can also boast almost century-old vines, are mainly reserved for Pinot Noir, complemented by small percentages of Chardonnay. The agricultural management follows the principles of integrated pest management, while vinification takes place in a winery with parts dating back over 250 years. The Chardonnay begins fermentation in stainless steel tanks and finishes in French oak barrels, where the wine also matures. On the other hand, the Pinot Noir is almost completely destemmed before fermentation in contact with the skins. Generally, regional and communal AOC wines are aged in 20% new oak, while the Grand Cru matures in 60% new wood. Domaine Tollot-Beaut's labels boast some of the standout Appellations of the Côte de Beaune, such as Corton-Charlemagne and Corton Grand Cru, but the Chorey-les-Beaune Rouge remains among the most representative expressions of the Tollot family. Beyond the AOC in question, the winery's wines have a modern and elegant style that aims to enhance the unique expression of each cultivated climat. Tollot-Beaut wines also stand out for their exceptional longevity, with the major labels that can comfortably rest in the cellar for over 20 years.
