Vides Singulares
Vides Singulares is a Spanish estate that cultivates vines in the areas of the Sierra de Ávila and the Sierra de Gredos, in the heart of the Iberian Peninsula. It is an original project born from the desire to return to viticulture carried out in harmony with the environment and according to the rhythms of nature, with minimal human intervention. To support this vision, old vines have been recovered located in difficult-to-cultivate places, which had been abandoned with the advent of modern and mechanized viticulture. These are parcels cultivated with ancient indigenous varieties, which also represent a historical memory of the territory and a precious heritage to be preserved. Vides Singulares has aimed from the beginning to produce high-quality wines in full respect of the environment.
The original core of the estate is located in Ávila, halfway between Salamanca and Madrid, right in the center of Spain, in an elevated area where the vine has always been cultivated heroically by a few winemakers and had been almost completely abandoned. In in this area about 2.7 hectares of vineyards from a small family estate with an old mill have been recovered. The property is divided into small parcels mostly with pre-phylloxera plants of Garnacha, Albillo, and Verdejo. A patient and laborious task, to bring back into production plants that had long been abandoned in a wild state, without pruning. The plowing of the land and the management of the plants has been entrusted to a local winemaker, who has extensive experience in the field of old vines. Obviously, all field work, as well as the harvest, is carried out manually.
Another part of the vineyards is located in the Sierra de Gredos. Here, 2 hectares of old Garnacha and Albillo vines are cultivated on very poor and stony soils, composed of granite and slate. The plants are managed with extreme care and with exclusively manual operations. The agronomic management is carried out in harmony with the environmental ecosystem to allow the plant to reach a natural productive and vegetative balance. Obviously, all harvests are carried out manually, with selection in the vineyard of the best bunches to be sent for winemaking. The fermentations take place spontaneously using only indigenous yeasts. The grapes are partially destemmed and the trend is towards future winemaking with whole clusters. For aging, stainless steel tanks or large used barrels are used, so that the wood allows for micro-oxygenation without imparting aromas to the wine.
