Dauvissat Vincent
The Domaine Vincent Dauvissat is an excellence of the splendid territory of Chablis. The famous Appellation is located in the Yonne department and belongs to the northernmost part of Burgundy wine. The Chablis vineyard occupies the gentle hilly slopes that rise from the Serein valley. The river crosses the territory from northwest to southeast, separating the area in two: on the right bank, the sunniest and best exposed, are the Grand Cru and some of the most prestigious Premier Cru, while on the left bank there are numerous parcels classified as Premier Cru. The climate is typically continental, rather cold and characterized by significant temperature fluctuations. Spring frosts are not uncommon, often compromising part of the harvest. The soils are of ancient marine origin and are composed of limestone soils, mainly consisting of deposits of oyster shells from the Kimmeridgian.
The Domaine is a family-run reality, the result of the experience of three generations of vignerons. Vincent took the helm of the company in the '70s and has managed to attract the attention of critics and enthusiasts as one of the best interpreters of the territory. The property extends over a total of about thirty hectares, divided into several parcels, with some prized vines cultivated in the Grand Cru of Les Clos, Les Preuses and in the Premier Cru of La Forêts, Sécher, and Vaillons. The vineyards are managed with low yields and are cultivated following the principles of organic farming and biodynamic practices, in full respect of the environment and seeking to preserve the natural fertility of the soils and the biodiversity of the ecosystem.
The scrupulous management of the vineyards allows for the production of grapes of excellent quality. The pressing is done very gently, and the vinifications take place with extreme care, in order to enhance the floral, citrus, and fruity profile of Chardonnay and bring to the forefront the saline and mineral notes typical of the terroir of Chablis.
