The agronomic foundation of Jason Ligas is permaculture, a set of agricultural practices aimed at achieving the well-being of plants and soil by focusing on crop biodiversity and reproducing the natural ecosystem. In the winery, the use of additives and oenological aids is banned, such as selected yeasts; rather, Jason follows the quality of the grapes with simple and discreet interventions. In this perspective, the use of filtration and clarification is excluded, as is the addition of sulfur.
