Ximénez Spìnola
Spinola is the name of one of the most important and esteemed “bodegas” in Jerez de la Frontera, but also that of a family entirely devoted, since the distant 1729, to the production of excellent Pedro Ximénez. Faithful to the ancient Spanish traditions and proud of its own history, which dates back to the founder Philipe Antonio Zarzana Spinola, the Ximenez-Spinola winery has always been driven by the ambition to reach unparalleled peaks of quality and prestige, even at the cost of keeping production volumes very low.
No family has shown as much attachment and devotion to a single grape variety as the Spinola family has to the Pedro Ximénez grape, to which it has dedicated, from the 1700s to the present day, an exclusive commitment. It is mainly thanks to the bodegas Ximenez-Spinola and its excellent production that the Sherry produced from Pedro Ximénez grapes has obtained the specific denomination. Its production involves a natural sun-drying of the grapes and a long aging in barrel using the Soleras Method, during which the wine oxidizes and reaches, in addition to the dark tone and a dense and velvety consistency, a rich and complex aromatic profile.
The Ximenez-Spinola winery has managed to maintain, despite its long and prestigious history, a family management, and the secret of its success is based on the vast knowledge of the most virtuous production techniques, jealously guarded by the family.
