In the craft panorama of Prosecco, the small Zanotto estate stands out without a doubt, located in the municipality of Montebelluna, in the province of Treviso. At the helm of the winery is Riccardo Zanotto, who began marketing the first labels in 2009, elevating the family's winemaking tradition. Riccardo's goal is to convey the history, aromas, and character behind the culture and traditions of the beautiful Conegliano-Valdobbiadene area. The value at the base of Riccardo Zanotto's production is the belief that great wine is born in the vineyard, which is why the producer meticulously cares for the agronomic aspect.

The Zanotto estate comprises just 7 hectares of vineyards almost entirely reserved for Glera, a semi-aromatic grape variety at the base of Prosecco. Furthermore, the producer purchases grapes from trusted local growers with whom he shares a sustainable and genuine vision. For the sparkling process, Riccardo Zanotto adopts two distinct techniques: one according to the established Metodo Martinotti, which involves placing the base wine in an autoclave at controlled temperature and pressure with the addition of sugars and yeasts, the other following the Metodo Ancestrale, a practice that involves bottling the must-wine still in fermentation in such a way as to produce spontaneous effervescence in the bottle thanks to the transformation of residual sugars. Furthermore, the refermented in the bottle are not subjected to any filtration or disgorgement operations and therefore present a healthy sediment that characterizes the selection 'Col Fondo', which has become a symbol of the estate so much so that it is also known as "Zanotto col Fondo".
