Zillinger

Herbert Zillinger is a talented Austrian producer advocate of biodynamics, a holistic vision through which the winemaker sincerely interprets the territory he cultivates, extracting expressions of crystalline charm. Driven by passion and ignoring current trends, Herbert quickly established himself among the most talented producers in all of Austria, also supported by his wife Carmen, who has been by his side since 2005. The winery is located in Ebenthal, north of the city of Vienna, in the Weinviertel area, a denomination from which Herbert and Carmen decided to distance themselves as they do not feel adequately represented. In fact, the Weinviertel is the largest wine region in Austria and is thus composed of a mosaic of very different territories, not reducible to a single common identity.

Welschriesling, alongside Sauvignon Blanc and Chardonnay. The plants rest on very heterogeneous soils, consisting of loess, silt, sandstone, and limestone, also rich in quartz, feldspars, mica, and clay minerals. All fermentations occur entirely spontaneously thanks to the sole intervention of indigenous yeasts, and throughout the entire winemaking process nothing is added and nothing is taken away, in order to fully respect the character of the terroir. The only additions concern sulfur, used in small quantities only when necessary to stabilize the wines before bottling, a process that occurs without prior clarification or filtration.The wines of the Herbert Zillinger winery make freshness and minerality their standout features. The production is divided into two categories: ‘Freestyle’, including labels of great drinkability that represent Herbert's desire to experiment, and ‘New Classic’, pure and refined interpretations of the terroir.
